The endless summer road

Beehive Adventure Day: 18



Mirror Lake Highway. Beautiful, quite, and serene. A never ending sky that is filled with perfectly white bunches. This place is my comfort. I have made many memories here. One of the most magical things about this highway is that each season has a different look, smell, and feel. I am so thankful that this year we got to enjoy the summer season on Mirror Lake Highway.

High West Tour

 



This past weekend the hubby and I went on a tour at High West Distillery and Saloon. They create, make, and bottle their own whiskey. Neither the hubs or myself are whiskey drinkers but the tour was still entertaining. The building was originally the first sinclair gas station up here in Park City. The past and present owners have kept a lot of the original things in the house (now restaurant) . Which is very neat! The lab where they create the whiskey looked like a science laboratory that you would see in a movie.

Bringing the East Coast to Park City


Bear and I have one downfall and that is east coast pizza. Yes, we order it once a week, usually. And it is oh so yummy. My mouth is watering right now as I am thinking about the thin crust and delicious cheese.  So, when my Mom had told me that they had gone and got pizza at this new east coast eatery called Maxwell's in Park City, I new that we had to go try it when we went out to Utah. 

Saturday we headed to Maxwell's. The place is very east coastly (if that's a word). They have decor and memorabilia from New York and New Jersey hanging up on the walls. As you can see we had to get a picture of us standing in front of the garden state license plate.   



We ordered pizza and hot wings. East Coast staple food!  And I think the east coast has met their match. We don't need to mention that the owners are from the east :) 
They even had a cute outdoor dining area.




They even have cornhole! And yes, the girls won! We had a great time eating, chatting, and playing games.

Beehive Adventure: Day 13


I found two items to add to my favorite things about utah list (it keeps on growing)!


First up:  IN-N-OUT BURGER 



There is something special about a burger from In-N-Out! I grew up in California and these burger joints are the favorite among locals. I remember going with my Nana and Papa, we always ordered the same thing, cheeseburger, fries, and a strawberry shake. Now that In-N-Out Burgers are popping up all over Utah,  Utahans get to experience the same excitement about these little hamburgers. Yesterday my Mom took me to get a burger and fries, and boy oh boy was it delicious. If you have never been, I highly recommend it! 

Next item to add to my favorites list is The Sweet Tooth Fairy Bake Shop
I have heard about this shop and the scrumptious cupcakes that they offer. Anyone who knows me knows how much I love cupcakes. So after our burger we headed to get our cupcake fix. It was probably the best cupcake that I have ever had. Sweet, moist, and delicious.  I will most definitely be making another trip before we head back East. It felt refreshing to be out here in Utah spending a day with my Mom.

Strawberry Rhubarb Delight



Strawberry Rhubarb Cobbler

4 stalks of rhubarb-diced
3 cups strawberries-quartered
juice of a lemon
1/4 cup of sugar
3 teaspoons of cornstarch
pinch of nutmeg
pinch of cinnamon


For the Topping
1 cup flour
1 teaspoon baking powder
1 tablespoon brown sugar
3 tablespoons of raw sugar
zest of one lemon
1/4 cup melted butter (optional)
1 tablespoon of olive oil
1/4 cup walnuts (any nut of your choice would work)


Preheat oven to 350'
Add rhubarb and strawberries to a casserole dish - tossing with sugar, corn starch, nutmeg, and cinnamon. Squeeze in lemon juice and stir. set aside.
In a small bowl combine all topping ingredients except walnuts.  Use your hands and scatter the toppings evenly over fruit. Sprinkle with walnuts.
Bake for 45 minutes.

Enjoy with vanilla ice cream

Celebrating all American Style

Beehive Adventure: Day 7
 





Perhaps one of the best things about Utah in the summer is that there is always fun activities happening. On Saturday we headed to Jordanelle to watch the fireworks on the water. We packed our blankets and chairs and made a night out of it. The weather was perfect. We watched all the children play in the lake and ate our yummy fried chicken, I even got some cotton candy, one of my favorites. It was a perfect summer evening.

Day Six here in Utah was filled with outdoor fun. We went to the weber river for everyone minus myself to fly fish. I opted to read my book. My Dad caught two fish and Bear and my Mom, well they had fun. We brought a picnic and enjoyed a refreshing watermelon in the hot sun.

Beehive Adventure: Day Two



On Monday afternoon Bear, myself, and my grandparents headed to the little town of Kamas to grab a hamburger and chocolate malt. Walking into this little restaurant/store was like walking right into the 1950's. I loved it. The books on the table, the signs on the wall and the little nicknacks that gathered on the shelves, all proved that we were in a small town local establishment. We ordered hamburgers, fries (with fry sauce), and 2 chocolate malts to share. It was a wonderful lunch and we are so blessed to be able to spend time with my lovely Grandparents.

The Beehive State


As most of you know the hubby and I left New Jersey last week and headed to the beehive state, UTAH. We will be calling this home for the next 6 weeks. This place is where my heart is. The smell of the mountain fresh air and the sound of silence is something that I took for granted when I was growing up here. Now that I have had a taste of the complete opposite, I really appreciate the peacefulness and beauty that surrounds this part of the country. The hubby and I intend on making some good memories while we are here for the summer, and I hope to capture all of them.

My Birthday







Birthdays have always had a magical feeling about them. Even as I have become an adult I still feel the same magic and charm that I did when I was younger. This year was no exception, I had a great day! At work I had beautiful flowers delivered to me from my wonderful parents and I went out to a delicious lunch with some of my co-workers. When I got home the table was decorated with packages and cards. The only thing that I had requested for my Birthday were ribs and macaroni and cheese, homemade might I add.  The hubby delivered on that request and made scrumptious ribs and homemade baked mac and cheese. Later I opened presents (Bear surprised me with a special little treat, a coach bag)  and we shared a cupcake. It was a lovely evening.
